Potatoes: They provide complex carbohydrates and fiber, are low in fat and contain 15 different vitamins, minerals and trace elements such as magnesium, iron, zinc and phosphorus as well as a high proportion of potassium, vitamins B and C.
Sweet potatoes: According to the American health authority CSPI, they are one of the most nutritious vegetables due to their valuable fiber and their high content of beta-carotene and vitamin E.
Pumpkin: It is one of the least caloric vegetables and it is rich in vitamin C, beta-carotene, minerals and phytosterols. Due to the dietary fibers it contains, it is very digestible and facilitates digestion.
